A Taste of Sicily

Chef Michael leads culinary adventures near Ragusa, in southern Sicily. These recipes are a few of his favorites from that region. To start, well make Arancini Ragu, which are crisp risotto balls with a spicy Sicilian meat sauce, followed by Fennel Salad with Blood Oranges, Cured Black Olives and Arugula. Next, we’ll stuff Swordfish Rolls with Pine Nuts, Capers and Currants and finish things off with a White and Dark Chocolate Ganache with Figs and Pistachios.
